Sandy Daza's Chicken Pork Adobo Recipe

whole peppercorns

soy sauce






To make the marinade: Mix 1/2 cup soy sauce and 1 cup vinegar, 1/4 cup chopped garlic, 2 tablespoons of worcestershire sauce. Add bay leaves and peppercorns as desired. Add a bit of water. Marinate your liempo and chicken liver in this mixture overnight, or for an hour at least.

To cook:

Saute garlic in a pan and add marinated liempo. Cover and allow to simmer for 45 minutes to an hour. If liquid gets too dry, add a little water. 

Add the chicken and allow to cook for about 20-25 minutes. 

Take the liver and chicken out of the pot while the pork is left to simmer.

Using a mortar and pestle, mash the liver. Add it back to the pot with the chicken and allow to simmer for a few more minutes. Serve with rice and enjoy!
