Recipe: Baked Salmon with Asparagus Pasta

1/2 cup white wine

5 pieces salmon

200g fettucine pasta

2 lemons

1/4 cup capers

1/2 tsp. chili flakes

10-15 stalks asparagus

1/4 cup butter

3/4 cup minced garlic

1 cup extra virgin olive oil





Cook al dente according to package instructions. To season the pasta, add 2 tbsps. of salt to cooking water.


In a mixing bowl, add 1/4 cup melted butter, 3/4 cup minced garlic, 1 cup extra virgin olive oil, and the juice of 1 lemon. Season with 1/2 tsp. of chili flakes, 1/2 tsp. pepper, and 1 tsp. salt. Add 1/2 cup white wine.


In a baking dish, add cooked pasta and drizzle with half of your sauce.

Lay asparagus stalks on top, enough to cover pasta.

Place 5 salmon pieces on top of asparagus.

First, add fresh dill to the remaining half of the sauce you set aside. Then, drizzle the remaining mixture on top of salmon slices. Top the salmon with 1/4 cup capers and 1 lemon sliced into rounds.

Then, wrap the entire baking dish in aluminum foil, allowing the foil to form a slight tent at the top to leave room for cooking vapors to circulate.

Place in an oven preheated at 350 degrees. Bake for 20 mins.
