We know, we know. It can’t be helped, Pumpkin Spice Lattes have become a fall staple, just like the Peppermint Mocha has been for Christmas.

But before you grudgingly troop to your nearest Starbucks, why not try this healthy version? We take away the sickening amounts of sugar and replace it with more natural ingredients that you don’t have to sugar crash over later on.

The basic structure of any latte goes as follows: coffee, milk and sweetener, if desired. Our pumpkin spice latte adds the pumpkin to the milk, for that perfect fall kick:

- 1 cup of coffee (brewed or instant will do)

- 2 cups milk of your choice

- 2-3 tablespoons honey, agave, or stevia

- 2 tablespoons pumpkin puree

- 2-3 tablespoons pumpkin pie spice (or: mix equal parts of powdered cinnamon, nutmeg, and ginger)

- Optional: whipped cream or non-dairy alternative to top

You can choose to brew your favorite coffee (make it extra strong!) or espresso for this. For your milk, simmer together pureed pumpkin and milk in a saucepan until you get smooth, creamy, pumpkin infused milk. Flavor the milk even more by stirring in pumpkin pie spice or a mixture of cinnamon, nutmeg and ginger.

Assemble your latte the classic way—one part coffee to two parts milk. Add more coffee or milk as desired. If you’re making this iced, reduce the amount of milk you add before topping it with ice. Yum!
