Mommy Goodie: Make Mini Muffins at Home with this Simple Recipe

Hey mommies! Here's a simple recipe you can follow next time you want to whip up tasty mini muffins for your kids. You can make them with chocolate chips, corn bits, banana, or other flavorful additions of your choice. Yum!

 

Ingredients:

  • 2 cups white flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup melted butter
  • chocolate chips, banana bits, corn, or dried fruit

 

Preparation:

Preheat the oven to 400°F/200°C. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour. The batter should not be smooth. Mix in chocolate chips, cranberries, or dried fruit of choice.  Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each.
